The Idaho Department of Juvenile Corrections, Lewiston facility is seeking a full-time Dietary Aide Senior to join our food services team. In this position the employee prepares, portions, and serves delicious and nutritious homestyle meals for our juvenile population.

ABOUT THE DEPARTMENT OF JUVENILE CORRECTIONS LEWISTON:

JCC–Lewiston provides a highly structured, staff-secure program using a Social Learning model based on the Positive Peer Culture foundation. The program provides custody and treatment of male juveniles whose criminal history requires services beyond the community. The Lewiston program adheres to the five pillared approach of targeted treatment, education, counseling, family engagement, and skills building. In addition, the program focuses on cognitive skills building designed to alter criminal thinking patterns and requires that juveniles are accountable for behavior and rewarded for progress.

Responsibilities:

  1. Food Preparation:
  • Prepares meals within guidelines of menu and dietary requirements, and the standards of appearance, taste, temperature, and sanitation.

  • Prepares salads, fresh vegetables and fruit, beverages, snacks, juice, salad dressings, and similar items for regular and modified diets.

  • Cleans, cuts, chops, dices, slices, and purees foods.

  • Opens food containers and drains fruits and vegetables.

  • Bakes, slices, and portions breads, cakes and pies.

  • Prepares frosting, icing, puddings, fillings, gelatins, and whipped toppings.

  • Bakes, roasts, stews, fries, and steam-cooks food.

  • Makes sandwiches and prepares other specialized foods.

  1. Food Serving and Area Preparation:
  • Turns on and adjusts steam tables and refrigerated units.

  • Portions entrees, salads, desserts, fruits, and other items on serving line with the proper portion sizes.

  • Prepares meals for special diets.

  • Arranges food, beverages, and dishes for serving.

  1. Cleaning and Sanitation:
  • Sweeps and mops floors.

  • Scrubs walls and windows.

  • Cleans steam and eating tables, food carriers, trays, and chairs.

  • Defrosts refrigerators.

  • Cleans walk-ins, storage areas, utensils, and equipment.

  • Operates commercial dishwasher.

  • Monitors temperature levels in dishwasher by checking gauges or using thermometers.

  • Monitors pH balance in dishwasher using chemical test strips.

  • Disassembles dishwasher and cleans room when finished.

  • Hand washes dishes when necessary.

Minimum Qualifications:

Good knowledge of:

  • Sanitation and safety practices used in food handling Equipment and devices (appliances) used in food preparation.

Experience:

  • Operating and cleaning kitchen equipment.

  • Cleaning and sanitizing kitchen areas.
